Gastronomy

The best way to truly get to know a place is through its gastronomy and the people who preserve it. São Miguel offers a rich culinary tradition that reflects the island's identity and history. From dishes cooked in volcanic fumaroles to the fresh flavours of the sea, every meal tells a story. Here is our selection of traditional dishes and restaurants where you can discover the authentic Azorean taste.

São Miguel Gastronomy

Delicacies

O Cozido das Furnas

Uniquely prepared in the volcanic fumaroles of Furnas, the Cozido das Furnas is one of São Miguel's most emblematic dishes. Cooked underground, harnessing the natural heat of the volcano, this dish features intense and authentic flavours that set it apart from any other traditional stew. Its singular cooking method and the final result make it an unforgettable gastronomic experience.

Where to taste: Restaurante Tony's, Furnas, Povoação.

Queijo do Vale

Queijo do Vale, also known as Queijo da Paula by locals, is a traditional artisan cheese from the parish of Furnas on São Miguel island. What makes it truly unique is its traditional preparation, which combines fresh cow's milk with natural sour water from the Furnas valley, giving it an unmistakable flavour and texture. At Queijaria Furnense, visitors can closely follow the entire production process and taste the five available varieties: semi-cured, buttery, with thyme, with oregano and with garlic. An authentic tasting that reveals the genuine flavours of Azorean tradition.

Morcela com Ananás

The Azorean morcela is a regional sausage made with pig's blood, distinguished by its sweet and spicy flavour, very different from traditional mainland blood sausage. It is usually served with pineapple, creating a delightful contrast between the intense flavour of the sausage and the tropical sweetness of the fruit.

Fresh Fish & Seafood

Fish

São Miguel benefits from an abundance of fresh fish in its waters, making it one of the pillars of local gastronomy. Indulge in a variety of species caught daily, including regional fish such as Boca Negra, Robalo and Dourada.

Tuna

Fresh Azorean tuna is a must-try gastronomic experience. Whether served braised with a sesame crust, simply grilled or fried, this noble fish wins you over with its unique flavour and texture. The secret lies in the freshness of the product and the care in its preparation, a true Azorean delicacy.

Seafood

Beyond the fresh fish, São Miguel offers a rich variety of seafood, with highlights including the must-try grilled limpets and the delicious barnacles, as well as the famous Azorean octopus.

São Miguel's gastronomy goes far beyond the sea. For meat lovers, the regional steak is a must-try experience: a tender cut from island-raised cattle, seasoned with the characteristic local pepper and served with a flavourful sauce that you will want to savour to the last drop with bread.
